Lazy Quiche |

Servings: 6
- 1 cup broccoli, cooked and chopped into bite size pieces
- 1/4 cup roasted red bell peppers, diced
- 1/4 cup onions, diced
- 1/4 cup bacon, cooked and chopped
- 1/2 cup cheddar cheese, shredded
- 6 eggs
- 1 cup heavy cream
- salt and pepper, to taste
1. Preheat oven to 350 F. Spray 10" glass pie plate or baking dish with non-stick cooking spray.
2. Layer bottom with of pie plate with broccoli, onions, bacon, and peppers. Sprinkle cheese on top.
3. In medium size bowl beat eggs. Then add in heavy cream, salt and pepper. Mix well.
4. Pour egg mixture in pie pan over veggies and bake for 35 minutes or until knife inserted in middle comes out clean.
Notes: Can use any left overs you like, just adjust carb counts. This also works well with real bacon bits and will save even more time.
