Pecan Crusted Cod |

Servings: 4
- 1 pound cod fillets, thawed
- 1/2 cup pecans, finely chopped
- 1 1/2 cups pork rinds, finely crushed
- 2 tablespoons lemon pepper
- 1/2 stick butter, melted
1. Preheat oven to 375 degrees. Finely crush pork rinds and put in a large bowl. Finely chop pecans and add to pork rinds. Then add lemon pepper and mix well.
2. Melt butter and place in large bowl. Dip fillets into the butter and then coat in pork rind mixture.
3. Place in glass baking dish sprayed with non-stick cooking spray and bake for 12-15 minutes, or until fish flakes easily. (This will depend on the thickness of your fillets).
Notes: Since you will not be using ALL of the butter and pork rind mixture, your carb counts, calories, etc. will actually be lower than shown.
